A regional restaurant cut into the side of rolling pastural hills on the southeast coast of Tasmania, roughly 14 guests are welcomed per service by a rammed earth building, entering via a choreographed foyer. Seated in an intimate timber lined dining room, the landscape and the kitchen are on show.
