DootDootDoot rebels against the ordinary and excites in its individuality. Dark herringbone floors, open kitchen, leather banquettes and a 1200-bottle local cellar create a dramatic yet minimal interior. 10,000 amber globes create a dense bubbling installation in tribute to fermentation, one stage in the hotel’s alchemy narrative.
